Is there a way to make only German African Corp units from the IFA mod spawn?

If using their faction name isn't working or giving you the desired result, you'll probably have to ORBAT your own faction with just the stuff you want.

The IFA team has already divided up the faction so yes. Just plug in the faction name.
FYI...you can always find faction names in the config editor in Eden under CfgFactions.
